If I don't need music for every recording what recordings need music besides commercials

For your professional demo reel, I highly recommend working with a well-regarded audio engineer. They'll give you a great crash course in demo reels and will help you put together music to go with your demo spots- especially if you do commercials, animation, IVR, or something like that. Stuff like audiobooks may not need background accompaniment, however you'll still want to work with an audio engineer to make sure the clips you choose still sound consistent. (Often, you'll record your whole demo in the same studio to ensure an even sound on your demo.)

For your audition 'demos' on Voices, you don't need background music unless the client specifies they need music as well.
