But in recent years, Montana has added another notch in its belt, with cities like Missoula and Bozeman transforming themselves into hip urban centers. This may seem counterintuitive, but when you're smoking meat, be sure to add a little spritz of moisture every now and then. The reason is simple physics. When meat becomes too dry, it forms a crusty outer layer that prevents further smoke from entering. By adding moisture, you allow the smoke to penetrate the meat when you're doing an accent. What you're really doing is inventing a new character because a great accent isn't just about the voice. It's about everything. The word choice, body language, sensibilities.
