The photographs shown here are of listeria monocytogenes forming biofilm under a range of temperatures. In the first panel, the bacteria are growing at four degrees Celsius. This is roughly the temperature of most refrigerators. Listeria is killed by pasteurization and cooking. However, lunch meats and hot dogs can become contaminated after factory cooking but before packaging. This is precisely what happened in the 2008 listeriosis outbreak in Ontario that killed 23 people and made 35 others seriously ill. The source of the outbreak was lunch meats produced by Maple Leaf Foods. If you swear off lunch meats for good, your risk for listeriosis dramatically drops, and your body will thank you for it, too.
